Yes, it’s chocolate! But not to worry it has a healthy angle. For this recipe is using low fat ingredients that make it a healthier option.
What you need
30 chocolate wafers
4oz bittersweet chocolate, melted
1 tablespoon walnut oil
3/4 cup sugar
1/4 cup cornflour
1/4 cup unsweetened cocoa
1 cup and a 3/4 cup of skimmed milk
2 large egg yolks
4oz dark chocolate, finely chopped
1 tablespoon white rum
10 tablespoon fat-free frozen yoghurt
What to do:
Whizz the wafers in a food processor until finely ground. Add 3oz melted chocolate and the oil, then process until blended. Press into the bottom and up the sides of a 9-inch pie plate. Freeze for 15 minutes until set.
To prepare the filling, combine the sugar, cornflour and cocoa in a large saucepan and stir with a whisk. Add half the milk and the egg yolks, stir with a whisk until smooth. Stir in the remaining milk.
Cook over medium heat for five minutes until thick and bubbly, stirring constantly. Remove from the heat and add the chocolate, and stir until smooth. Stir in the rum. Pour into the prepared crust, cover and chill for four hours or until set. Serve with frozen yoghurt
