What you’ll need:
8 slices of black pudding
2 tablespoon butter 8 tablespoons of peas
8 tablepoons of mashed potato
What to do:
Cook the black pudding and peas as per packet instructions. Heat a frying pan to make it very hot, add butter and crushed garlic and sear the scallops. They only take around a minute each side (depending on size). Zap the peas with the potato using a hand blender and place on plate, place on the black pudding and add the scallops.
